Never been to Shoreham before but not been to the Air Festival either...mainly due to the traffic nightmare.

Bournemouth is a good show, to avoid the parking and traffic, just park in poole and walk along the seafront the few miles.

B/mth airshow is good (free), but the sun is in your face all day. The clifftops provide a good view but a decent lens is required from there.
As the display line is straight you can get close to the action by going down onto the shore.
Both Shoreham and B/mth often share displays so it's likely they'll both have similar stuff over the weekend with acts transiting along the coast from show to show.
