To interview serving UK military aircrew (RAF, RN or British Army, and their reserves) you will require formal permission from the MoD. This formal permission is regardless of whether you are a private individual or a profit-making organisation. The rules have been tightened in recent years and it is not in the interests of serving personnel to bypass these rules.

Obviously there are no such restrictions for retired personnel other than any continuing or on-going security matters.
