A search for Donna Nook or Holbeach in the photo section will give you an idea of what you may see - with luck.
As for bombs. You may see some fluffy white smoke and a spark or two. Or flares and seals at Donna in December. But no spotters area as such, just a few vantage points.

Not a spotters zone as such at tain but you can park on various different spots on the old airfield that give good views onto the range

If you get lucky and you find yourself up at Durness when they are useing the range area for air to ground, find your way to Balnakeil and then hike across the beach and the dunes to Fhairaid head where the range tower sits.
Even sitting outside the fence, facing the target rock gets you a good view of the goings on.
In a previous life I was able to get access behind the wire and have watched Tonkas releasing LGBs from on high. A great spectacle, even if the bombs are just inerts. Have really old photos somewhere of Jags & Harriers dumping live, non smart 1000lbers. Them hitting the rock is spectacular.

Holbeach. A walk along the sea wall gives good views but you will need a long lens for ‘catching’ ordnance. Look on my Flickr account, Apache firing rockets; F-15 dropping retarding dumb bomb and Tornado ejecting flares. Helicopters often land near the tower and the staff there are friendly.
Beware the steers and take a large pinch of patience as visitors are infrequent and seldom does each one drop ordnance.
Do not leave the sea wall.
I’ve never caught ordnance at Donna Nook! Probably because of too few visits.
