Hi On a budget of £500 Is that enough to get me stated on a flight sim ?and what to avoid when buying.

Fireshot the sky's the limit with simulations and how much you want to spend, Microsoft Flight Sim 2020 is abit daunting at first but excellent !! If you do decide to go down that route, I would recommend this channel it helped me no end with regards to set up and controls etc.
