What Tanker you after?
There are a number of aircraft you can use, but not all have the hose or boom deployed. However, on Thomas Ruth freeware MRTT, there is an option to show AI or multiplayer version of the aircraft to have the hoses out. So if you recored a flight in the Tanker for example using FS Recorder, you could then play the recording as AI traffic, then you go up to the tanker in your choose aircraft to try receive off I know on here, http://rayparker-repaints.jimdo.com/ you can get a RAF MRTT pack, and the some of the AI Tankers have the hoses out. However, I'm not 100% as I havn't tested in myself.
Other tanker you can get freeware, where the boom deployed is a KC-135T on most freeware sites. It may show in FS Recorder using the same method above.
Other than that, can join a Mil VA, so the other person is flying the tanker, for example a Voyager, and just have the hoses out model in
