This is an extremely capable camera, which can be tailored in many different ways.
I use the 5D3, and when used for aircraft, I use either 'single point expanded' or 'zone area' depending on focus area required.
These, coupled to Case 1 selection, work well for me.
Also, have a look at first/second shutter release/focus priority in your setup for Servo.
Sounds complex to start, but easily adapted.
I was changing mine a number of times depending on subject (aircraft/ sport / model / wedding etc), that I bought 2 and have them set independently.
Most importantly (I found), was to get a little notebook and record your setup; it costs nothing and you soon identify a setup which is optimal for yourself for each subject.
